What to do with 50lbs of Hamburger Meat + More!


$68 worth of meat creates 42 meals for my family of 5!





This past Thursday night I posted my Kroger Shopping Trip this week with tons of mark down meat! If you missed it, you can go here to check it out!

I ended up with 50 pounds of Hamburger meat along with various other meats! It has been my experience with "mark-down" meats that you really do need to cook them as soon as you get home! In the past I have purchased discounted meat and placed it immediately in the freezer. For things like roasts and even an item as small as 1 lb of hamburger take approximately 2-3 days to thaw out properly in the refrigerator! In the past the meat has gone rancid during those 2-3 days while defrosting and I have found that cooking it prevents this from happening!

"Lesson Learned"...it's not a good deal if you have to throw it out!

Many of you may be wondering what on earth I am going to do with all of that meat! I came home that same day and spent about 3 hours in the kitchen cooking and preparing meals that will last me for the next 4-5 months! I assure you that we will not be eating red beef everyday for the rest of our lives! Along with a freezer full of chicken and fish the ground beef meals will only be eaten about 3 nights per week!

Here Goes! This will be a long one!

We will start with the hamburger meat first! I had 10 5lb packs all together!


1. Cooked 5 packages (25 lbs) on the stove (made a mess while I was at it!). This meat will account for 10 meals (5 people) plus leftovers for 5 lunches!


I used a potato masher to get the chunks out of the meat instead of hand chopping it with a spoon!



2. 2 rolls (10 lbs) were mixed with spices to create a total of 30 hamburger patties! I froze these individually on parchment paper and stored them in ziplocs. I will be able to go in and pull out 5 at a time without them sticking together! This will account for 6 meals.



3. I used one whole roll (5 lbs) to make meatballs. Again, I placed them on a cookie sheet with parchment paper to freeze individually and then later placed them in bags. Approximately 60 meatballs in all! This will account for 4 meals.

4. The last 2 rolls (10 Lbs) I made into meatloaf! I used your typical egg and spices but instead of bread crumbs...I put a box of Stove top stuffing in each! I do have bread crumbs but I thought that I would give this a try to see how it turns out! I am all for experimenting! This will provide us with 4 dinners and 4 lunches (sandwiches made out of leftovers)!



5. I purchased the 3 packs of Boneless Center Cut Pork Chops. Each pack had 4 pieces in it. I broke this meat down into 2 meals. One is plain and the other has been marinaded(I marinade before I freeze...this allows the flavors to start penetrating the meat as it is freezing and also while it is thawing out...no additional time needed in refrigerator!) Equivalent to 2 meals!

6. The 2 Pork Roasts were immediately cooked! Once went in the crock pot with potatoes and carrots and the other one was baked in the oven to use for BBQ pulled pork! Equivalent to 2 meals!


I used a McCormick Rub along with the rest of the beef broth left over from the crock pot roast!





I covered the pan with tin foil and let it cook on 325 for about 1 hour and 45 minutes. After that, I allowed it to cool down and cut the fatty parts away!


Next I pulled the meat into strips!


I served this meal as an open face sandwich with BBQ Sauce on toasted bread. We added pickles and chips to finish off the meal! It was delicious!


7. The beef roast was turned into, what I like to call, "Pretend Steaks" (In reality...$11.99/lb and up is not in our budget for the real deal...we make do with what we have and it always turns out wonderful.)!

This meal only cost us...
$5.89 for the Roast
.99 for the olives
.59 for the lettuce
.14 for the peppers
.63 for the feta cheese
0.00 for the worcestershire
.19 for all spices used
.45 for the potatoes (5 of them)
.05 for the butter
TOTAL: $8.93 for a family of 5 ($1.78 per serving)

I trimmed the roast following the "fault lines" (my fancy words for where the meat has a tendency to come apart). They were marinated in a mix of worcestershire, and spices. I also flattened it out as much as I could!


I used my George Foreman Grill (the one I found at a yard sale still in the box sealed for $10 2 summers ago)!

I like my steak medium and my husband likes them well done!

The 5 of us were able to eat like kings tonight!

I added Microwaved Baked Potatoes. All you have to do is wrap them in plastic wrap or seal n' press and stick them in the microwave for about 14 minutes!

I used the .59 head of lettuce to make a "Greek" style salad. It was topped with Feta Cheese that I purchased and froze a while back after paying only .63 each for the packages! We also included 1 can of Jumbo black olives (my daughter would eat the whole can by herself if I let her!) for .99 and about half a jar of Vlassic Peppers that I paid only .29 for!


A very yummy dinner indeed!

8. The two packs of Perdue Boneless/Skinless Chicken will be used in 4 meals! I froze it "As Was". It was already packaged individually!

I have never bought that much, but know if I do, I know to cook it that day (not freeze it).

Curious as to how your meatballs and patties will come out. You did not cook them....will they become rancid when you thaw?

The hamburger patties, meatloaf, and meatballs will all be cooked immediately from frozen. I will not have to thaw them out! I just drop the temperature on the oven by 25 degrees for the baked items so that the outside won't burn, and as far as the hamburgers go...they can just go right in the George Foreman, frying pan, or oven from frozen with no alteration to the temperature!
