Recipe Of The Week: Southern Style Collard Greens

Candi over at FamilyStampingFood has a great recipe for Collard Greens! I definitely will have to try this one! You can go here to check it out!

My favorite way to eat collards is with hot pepper sauce! Yummy! My daughter even eats them this way! Sunday dinners just wouldn't be the same without greens!

I make mine with chicken broth and smoked ham hocks...but this one has a little twist on it that sounds interesting!

Recipe Of The Week: Broccoli Casserole

Broccoli Casserole

Ingredients:

2 (10-ounce or 12-ounce) packages frozen chopped broccoli, cooked and drained
1 cup mayonnaise
1 cup grated sharp cheddar(mild will work just the same)
1 (10-ounce) can condensed cream of mushroom soup
1 egg, lightly beaten
2 cups crushed crackers (Ritz are the best)
2 tablespoons butter, melted
2 teaspoons of powdered garlic (optional)
Salt & Pepper to taste

Directions:

Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.

In a large mixing bowl, combine broccoli, mayonnaise, cheese, soup and egg. Mix well. Place the mixture in the prepared baking dish. Top with the crushed crackers and pour the melted butter evenly over the crackers. Bake for 35 minutes or until set and browned.

I add coarse black pepper and garlic powder to my recipe but this is optional! It tastes great by itself! It really doesn't need any more salt but you can add more if you would like!

This recipe should be something you can whip up fairly easy based on the items you already have on hand! You can use the Green Giant Valley Fresh Steamers broccoli and/or the Birdseye frozen veggies that we have been able to stock up on over the last few months! Just cook 2 bags in the microwave per directions on the package and throw it in the bowl. You don't have to drain them! If you have some of the veggies with the cheese sauce you can still use these without altering the recipe!

We've all gotten tons of Ritz Crackers from Publix along with the condensed cream soup at Target. This has been a hit at 2 parties in the last 2 weeks and I am sure that if you have broccoli lovers in your family that it will be a hit with them also!

Oh so good Chocolate Turtle Cheesecake Recipe!

Every now and then you get a craving...a craving for something so Divine and Rich. What comes to mind? For me...Chocolate Turtle Cheesecake.

I don't normally make a dessert unless it's a special occasion. We are having my grandparents over for a home-cooked meatloaf dinner tonight and I figured that there could be no better way to finish off a great southern recipe than with this cheesecake recipe!

I love making them from scratch but I found a recipe online from ThatsMyHome that is easy to make and that tastes just as good! There are tons of cheesecake recipes on this site but I stuck with my guns...the chocolate turtle variety!

*I did make one change to the recipe. I didn't have any vanilla wafers on hand so I made a graham cracker crust instead. Just simply replace the 2 cups of vanilla wafer crumbs with 2 cups of graham cracker crumbs. Use the same amount of margarine!*

Chocolate Turtle Cheesecake

2 cups of vanilla wafer crumbs
6 tablespoons of margarine (melted)
One 14 ounce bag of caramels
One 5 ounce can of evaporated milk
1 cup of chopped pecans, toasted
Two 8 ounce packages of Philadelphia brand cream cheese (softened)
1/2 cup of sugar
1 teaspoon of vanilla
2 eggs
1/2 cup of semi-sweet chocolate pieces, melted

Combine crumbs and margarine; press onto bottom and sides of 9 inch springform pan. Bake at 350ºF. 10 minutes.

In 1 1/2 quart heavy saucepan melt caramels with milk over low heat, stirring frequently, until smooth. Pour over crust. Top with pecans.

Combine cheese, sugar and vanilla, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in chocolate. Pour over pecans.

Bake at 350ºF. 40 minutes.

Loosen cake from rim of pan; cool before removing rim of pan. Chill.

Garnish with whipped cream, additional chopped nuts and cherries if desired.

Cheap Crab Classic w/ pasta salad recipe!

Kroger often puts Crab Classic (imitation crab meat found in seafood section) on sale for BOGO. If my memory serves me correctly the regular price is $3.29 (give or take .10 or so).

SmartSource.com has $1/1 coupons for this product that will make it around .60 when on sale!

I use this meat when I make pasta salad!

Recipe:

1 bag or box of pasta (can be tri-color spiral/penne/etc)
1 bag of Crab Classic (you can use less...if you see fit! I like a lot of meat in the salad)
1 jar of Artichokes (the marinated kind in spices and oil)
1 can of small black olives (sliced)
1 small onion diced
1 container of Feta Cheese (you can use as much or as little of this as you would like)
Diced Fresh Tomatoes (again as much or as little as you would like)
1 small bottle of zesty italian dressing (with all of that free Kraft we just bought from Publix)(If you already have the bigger bottles then just put enough in for everything to be coated well)

Boil Pasta per directions on box. Allow to cool completely. Add all other ingredients with the Italian Dressing last. Chill and serve.

You can be very creative with this recipe. You can use any vegetables that you have around the house. Pasta salad with just italian dressing, tomatoes, black olives, and feta is absolutely wonderful!

Other add-in options:
Green olives
left over chicken
pepperoni slices
water chestnuts
baby corn
bamboo shoots
green onion
fresh jalapeno diced (watch the seeds...too many make it extra hot)
roasted red peppers
capers
no italian? use olive oil and dry spices
want it creamy? use ranch or mayo with the italian

Homemade Cream of "?" Soup

I ran across this recipe today and thought that it would be great to share!

The "Cream of" soups are very costly (especially if you don't have a coupon or don't buy them on sale).

This basic roux recipe can turn into a great substitute for your Cream of mushroom/chicken soup mixes if you do not have any on hand and according to 5 dollar dinners only costs around $.50 to make compared to its $1.50 competitor (Campbell's).

Homemade White Sauce

Ingredients
2 T butter
2 T flour (I use rice flour to keep it GF!)
1-2 cups milk (whole or 2% is best!)

Directions
1. In saucepan, melt butter.
2. Once melted, add flour and whisk with butter.
3. Add milk to butter/flour mix and WHISK, WHISK, WHISK!
4. Cook on medium-high heat for 5-6 minutes. Stir often. Sauce will thicken.
5. If sauce is too thin, whisk in more flour.
6. If sauce is too thick, whisk in more milk.
7. Add chopped mushrooms for "cream of mushroom", chopped celery for "cream of celery". Add 3-4 T chicken stock for "cream of chicken".

Etc.

Thanks, 5 Dollar Dinners!

Please note that if you have never tried to make roux before...it burns very easily, you cannot walk away from it. When she says "Whisk" she means it! If at first you do not succeed...try, try again!

This recipe is also used for your basic gravy mix, add some bacon drippings for a great flavorful addition to mashed potatoes or rice!

Recipe of the week

Over the last month Publix has had many sales on Betty Crocker boxed potatoes! I ended up with quite a few boxes myself!

You may wonder...What on earth will she do will all of those potatoes? Here is one recipe that is a family favorite in my household!

Quick & Easy Cheesy Sheperd's Pie

1 lb of ground beef/chicken/turkey
1 box of Betty Crocker Garlic Mashed Potatoes (or any other variation of the mashed potatoes)
1 jar of gravy (can be substituted with 1 packet of powdered mix)
1 can of kernel corn
1 can of sweet peas (green beans can be substituted)
2 cups of shredded cheese
1 large can of fried onion rings *optional*

Brown ground beef, drain and rinse. Cook both packs of instant potatoes per specifications on box. In a 8X8 square baking pan spread ground beef to cover bottom. Spread 1 can of drained peas and 1 can of drained corn over ground beef. Next, pour gravy over other 3 ingredients (doesn't have to be perfectly spread out). Take cooked mashed potatoes and spread over beef and veggie mixture (Tip: Place mashed potatoes all at once in a big pile in center...this will make for easier spreading without pulling up the ground beef mixture and keep the layers separated). Spread shredded cheese on and top off with fried onion rings. Bake in preheated 350* oven for 20-30 minutes until cheese is melted and gravy is bubbling at the edges.

Onion variation: If you only have a fresh small onion on hand you can dice it up and throw it in with the beef and veggie mixture. Topping variation: You can also substitute the fried onion rings with flavored bread crumbs if you would like

Servings: 3 (you can double the ingredients to have leftovers for a family of 4 or enough to feed six! Use a 9X13 baking pan.)
Other variations of this recipe...Mexican style
Add taco seasoning mix to ground beef mixture. Replace green peas with black beans or a layer of refried beans. Substitue 1 cup of gravy for 1 1/2 cups of salsa OR 1 can of diced tomatoes w/ liquid. Top it off with sliced green onions and black olives...and add a dallop of sour cream to each serving!

Always be creative...see what you can come up with!

Would you like to share a recipe? Leave a link to your site or the recipe in a comment! I would love to hear from you!

What to do with 50lbs of Hamburger Meat + More!

$68 worth of meat creates 42 meals for my family of 5!

This past Thursday night I posted my Kroger Shopping Trip this week with tons of mark down meat! If you missed it, you can go here to check it out!

I ended up with 50 pounds of Hamburger meat along with various other meats! It has been my experience with "mark-down" meats that you really do need to cook them as soon as you get home! In the past I have purchased discounted meat and placed it immediately in the freezer. For things like roasts and even an item as small as 1 lb of hamburger take approximately 2-3 days to thaw out properly in the refrigerator! In the past the meat has gone rancid during those 2-3 days while defrosting and I have found that cooking it prevents this from happening!

"Lesson Learned"...it's not a good deal if you have to throw it out!

Many of you may be wondering what on earth I am going to do with all of that meat! I came home that same day and spent about 3 hours in the kitchen cooking and preparing meals that will last me for the next 4-5 months! I assure you that we will not be eating red beef everyday for the rest of our lives! Along with a freezer full of chicken and fish the ground beef meals will only be eaten about 3 nights per week!

Here Goes! This will be a long one!

We will start with the hamburger meat first! I had 10 5lb packs all together!

1. Cooked 5 packages (25 lbs) on the stove (made a mess while I was at it!). This meat will account for 10 meals (5 people) plus leftovers for 5 lunches!

I used a potato masher to get the chunks out of the meat instead of hand chopping it with a spoon!

2. 2 rolls (10 lbs) were mixed with spices to create a total of 30 hamburger patties! I froze these individually on parchment paper and stored them in ziplocs. I will be able to go in and pull out 5 at a time without them sticking together! This will account for 6 meals.

3. I used one whole roll (5 lbs) to make meatballs. Again, I placed them on a cookie sheet with parchment paper to freeze individually and then later placed them in bags. Approximately 60 meatballs in all! This will account for 4 meals.

4. The last 2 rolls (10 Lbs) I made into meatloaf! I used your typical egg and spices but instead of bread crumbs...I put a box of Stove top stuffing in each! I do have bread crumbs but I thought that I would give this a try to see how it turns out! I am all for experimenting! This will provide us with 4 dinners and 4 lunches (sandwiches made out of leftovers)!

5. I purchased the 3 packs of Boneless Center Cut Pork Chops. Each pack had 4 pieces in it. I broke this meat down into 2 meals. One is plain and the other has been marinaded(I marinade before I freeze...this allows the flavors to start penetrating the meat as it is freezing and also while it is thawing out...no additional time needed in refrigerator!) Equivalent to 2 meals!

6. The 2 Pork Roasts were immediately cooked! Once went in the crock pot with potatoes and carrots and the other one was baked in the oven to use for BBQ pulled pork! Equivalent to 2 meals!

I used a McCormick Rub along with the rest of the beef broth left over from the crock pot roast!

I covered the pan with tin foil and let it cook on 325 for about 1 hour and 45 minutes. After that, I allowed it to cool down and cut the fatty parts away!

Next I pulled the meat into strips!

I served this meal as an open face sandwich with BBQ Sauce on toasted bread. We added pickles and chips to finish off the meal! It was delicious!

7. The beef roast was turned into, what I like to call, "Pretend Steaks" (In reality...$11.99/lb and up is not in our budget for the real deal...we make do with what we have and it always turns out wonderful.)!

This meal only cost us...
$5.89 for the Roast
.99 for the olives
.59 for the lettuce
.14 for the peppers
.63 for the feta cheese
0.00 for the worcestershire
.19 for all spices used
.45 for the potatoes (5 of them)
.05 for the butter
TOTAL: $8.93 for a family of 5 ($1.78 per serving)

I trimmed the roast following the "fault lines" (my fancy words for where the meat has a tendency to come apart). They were marinated in a mix of worcestershire, and spices. I also flattened it out as much as I could!

I used my George Foreman Grill (the one I found at a yard sale still in the box sealed for $10 2 summers ago)!

I like my steak medium and my husband likes them well done!

The 5 of us were able to eat like kings tonight!

I added Microwaved Baked Potatoes. All you have to do is wrap them in plastic wrap or seal n' press and stick them in the microwave for about 14 minutes!

I used the .59 head of lettuce to make a "Greek" style salad. It was topped with Feta Cheese that I purchased and froze a while back after paying only .63 each for the packages! We also included 1 can of Jumbo black olives (my daughter would eat the whole can by herself if I let her!) for .99 and about half a jar of Vlassic Peppers that I paid only .29 for!

A very yummy dinner indeed!

8. The two packs of Perdue Boneless/Skinless Chicken will be used in 4 meals! I froze it "As Was". It was already packaged individually!

I hope that you have all enjoyed reading this post! I really enjoyed writing it! I was so fortunate to have such an opportunity for these great deals!

What to do with 10lbs of bananas!

Ok, so maybe some think I may have went overboard with 10 lbs of bananas, but to run across clearance organic bananas was a real treat! I bought every bunch they had out!

1. I brought them home and immediately cut them all up into slices! 2. I lined 3 cookies sheets with wax paper (shinny side up) and placed them all on there next to each other.
3. Some of the parts were more ripe than others and I left those pieces whole.
4. I stacked all 3 pans on top of each other and placed them in my deep freezer (this will allow all of the piece to freeze individually. When I take them out...I can place them in separate bags knowing that they won't all stick together!)5. I am going to let them freeze over night!

Here are some of my ideas for using them!

  • The whole pieces are going to make smoothies this weekend (when my husband is off to enjoy them).
  • I will also make a wonderful banana pudding one weekend with our Sunday dinner.
  • I plan to make a 2 Banana Pudding Pies to take to my family Thanksgiving Dinner.
  • We will eat them as a great frozen snack all by themselves (If you have never eaten a frozen banana you should try one! They are great! We pick them up with toothpicks and my daughter thinks that is the fanciest thing!)
  • We will also have them on top of some waffles and pancakes for various breakfasts!
We all often run into great mark-downs on items but may pass them up because we know that we can't use them as fast as they need to be used! I won't have to buy bananas for at least another 4 weeks! Paying $3-$4 for one month's worth of bananas is something that can easily be done! Stores mark them down on a weekly basis (sometimes sooner depending on whether or not they are organic or regular)! Most stores charge in the thirty cent range for these ripe bananas compared to their .64-.69 competitors!

I challenge everyone to be creative and let us know what you did with your bulk clearance score!
