Recipe of the week

Over the last month Publix has had many sales on Betty Crocker boxed potatoes! I ended up with quite a few boxes myself!

You may wonder...What on earth will she do will all of those potatoes? Here is one recipe that is a family favorite in my household!

Quick & Easy Cheesy Sheperd's Pie

1 lb of ground beef/chicken/turkey
1 box of Betty Crocker Garlic Mashed Potatoes (or any other variation of the mashed potatoes)
1 jar of gravy (can be substituted with 1 packet of powdered mix)
1 can of kernel corn
1 can of sweet peas (green beans can be substituted)
2 cups of shredded cheese
1 large can of fried onion rings *optional*

Brown ground beef, drain and rinse. Cook both packs of instant potatoes per specifications on box. In a 8X8 square baking pan spread ground beef to cover bottom. Spread 1 can of drained peas and 1 can of drained corn over ground beef. Next, pour gravy over other 3 ingredients (doesn't have to be perfectly spread out). Take cooked mashed potatoes and spread over beef and veggie mixture (Tip: Place mashed potatoes all at once in a big pile in center...this will make for easier spreading without pulling up the ground beef mixture and keep the layers separated). Spread shredded cheese on and top off with fried onion rings. Bake in preheated 350* oven for 20-30 minutes until cheese is melted and gravy is bubbling at the edges.


Onion variation: If you only have a fresh small onion on hand you can dice it up and throw it in with the beef and veggie mixture. Topping variation: You can also substitute the fried onion rings with flavored bread crumbs if you would like

Servings: 3 (you can double the ingredients to have leftovers for a family of 4 or enough to feed six! Use a 9X13 baking pan.)
Other variations of this recipe...Mexican style
Add taco seasoning mix to ground beef mixture. Replace green peas with black beans or a layer of refried beans. Substitue 1 cup of gravy for 1 1/2 cups of salsa OR 1 can of diced tomatoes w/ liquid. Top it off with sliced green onions and black olives...and add a dallop of sour cream to each serving!

Always be creative...see what you can come up with!
